Burgundy and Beaujolais/Lyon are two amazing regions in France that gained an international recognition thanks to their gastronomic delights and the richesses of their history.
If the history of Burgundy dates back from the most ancient times, the heritage that is granted is the fruit of the monks’ labor at the middle of 11th century when the power of the church was so tremendous (taken under the Lords protection, the Cistercians received uncultivated lands that they quickly turned into rich vineyards). The Duke of Burgundy Philip the Good who became one of the most powerful princes in Europe at the 15th century, creating the Order of the Golden Fleece (an order of knighthood) and united around him the nobility and the various Burgundian territories including Belgium and Holland, left an incredible architectural heritage that we can today admire in Dijon, the ancient capital of the Dukes.
For its part, Lyon is an amazing city, recognized by UNESCO as part of the world heritage. Ideally located between Massif Central and the Alps, not far from the Mediterranean, Lyon saw its largest development and economic growth between the Renaissance and the 1789 French Revolution. The city became a dynamic trade and business center, welcoming merchants from Middle-East and Asia to buy, sell and trade silk as well as leather goods, spices and metals. Banking families arrived from Italy to be part of this bustling city. The first method of credit was invented in Lyon, and the city was home to Europe's first Stock Exchange (Bourse). Besides its economy, Lyon had a flourishing culture hiring the city as one of the biggest publishing pole in Europe.

The richess of the Lyon’s gastronomy and the tradition of its bouchons, is the fact of its geographical location at the north-south and east-west crossroads. The travelers had easy access to fine food, and so did their horses. In old French the word "bousche" meant "bale of hay" and it was said that the horse were "bouchonnés" meaning that they were well fed and taken care of. These restaurants became especially popular during the nineteenth century when the “canuts” came for their midday “fast food” meal. Stopping today in a “bouchon” is taking part of the Lyon’s lifestyle and past history.
