ABOUT THE LYON’S CUISINE

Internationally recognized for one of the finest cuisine in the world, Lyon's cuisine owes its virtuosity to the quality of local produces. The farms of the Bresse and Charolais regions, the wild game of the Dombes, the fish from the Savoy lakes, the fruits and vegetables from the Rhone Valley and the Forez region are all within easy reach and supply the essential ingredients for Lyon's famed cuisine.

Regional specialities include : cervelle de canuts (soft cheese with herbs), petit salé (ham with lentils), quenelles (dumplings : puréed fish, veal or chicken mixed with whipped white eggs and cream, before being poached and then cooked with some cheese). The best place to taste these specialities is to experience a lunch or a dinner at a typical bistrot which is called here “bouchon”.

Program includes 2 hands-on cooking classes on Saturday and Sunday morning at the “Lyon’s Cooking School” under Executive chef Jean-Marc V., and at the “School in Les Halles” with Executive chef Philippe L. who also guides the food market visit. The school is nestled in “Les Halles Paul Bocuse”, a unique indoor market with more than 50 artisans and merchants offering top-quality products among the best in France. Food lovers meet there around the same passion for excellence and best of the Lyon tradition. Classes are taught in English, and both celebrate the French and Lyon’s regional cuisine, paired with fine wines.

ABOUT THE WINES

When we talk about the Beaujolais, we think to the Beaujolais Nouveau table wine celebrated mid-November. But the Beaujolais mostly boasts 10 crus listed among the finest wines in France: Morgon, Chiroubles, Moulin à Vent, Saint Amour… without forgetting Chenas which was the King’s Louis XIII favorite red wine. Our itinerary includes a half-day excursion to this wine region with visits to producers, and tastings.

After Lyon & Beaujolais, the journey continues to Burgundy, a region internationally recognized for its high quality wines and grands crus. Aside to visits of Dijon and Beaune, you will explore the vineyards of Côtes de Nuits, Côtes de Beaune, and Chablis. Visits to wine properties are enjoyable as well as the connections you’ll have with producers and wine makers. Of course, you’ll enjoy wine tastings all along your visits. On the way to Dijon, we will stop at the Clos Vougeot.

In Beaune, you will attend a 2-hour 12 wines tasting class at our intimate Wine School. It’s a great opportunity to improve your understanding in the Burgundy wines: history, vineyards, soils, characteristics & classification, grape varieties, appellations, vintages, wine tasting techniques, food & wine pairing, etc
