LYON AND ITS REGION AT A GLANCE

There’s many reasons to choose Lyon as your upcoming getaway destination. If the second French city is the number-one gourmet spot with numerous Michelin-starred restaurants and great “bouchon” bistrots, Lyon is also a beautiful city, built at the confluence of the graceful Rhône and Saône rivers, with an outstanding old district ‘Vieux Lyon’ dating back to the Roman ages and to the Renaissance which contributed to list the city at the Unesco world heritage. Besides its unique cultural attraction, Lyon remains a lively city with its thriving arts scene, numerous restaurants and bars, open-air markets, antiques, fashion designers boutiques, boardering the narrow cobbled streets that should be.

ABOUT THE LYON’S CUISINE

Described by many as the gastronomic capital of the world, Lyon's cuisine owes its virtuosity to the quality of local produce. The farms of the Bresse and Charolais regions, the wild game of the Dombes, the fish from the Savoy lakes, the fruits and vegetables of the Rhone Valley and the Forez region are all within easy reach and supply the essential ingredients for Lyon's famed cuisine. Regional specialities include : cervelle de canuts (soft cheese with herbs), petit salé (ham with lentils), quenelles (puréed fish, veal or chicken mixed with whipped white eggs and cream, before being poached and then cooked with some cheese). The best place to taste these typical recipes is to experience a lunch or a dinner at a typical « bouchon » bistrot, and much more better: at a cooking school through a hands-on class.

ABOUT THE COOKING SCHOOL

Enjoying the Lyon’s cuisine at finest restaurants is fantastic, but exploring it through hands-on classes with executive chef Jean-Marc V. is a unique experience you canno’t miss. Jean-Marc run his own cooking school set in his childhood house in Champagne, conveniently located 10 mn to Lyon. Here in his professional teaching kitchen, he operates cooking and pastry classes to amateurs as well as intensive trainings to professionals. Jean-Marc’s long list of accomplishments includes a twenty-years experience at Michelin-starred restaurants Alexandrin and Oasis, and at the Paul Bocuse Culinary Institute. Classes are scheduled in the morning with the option of the food market visit prior to the course, or in the evening after a busy schedule of visits and shopping. After wearing your apron and washing hands, you learn to cook a gastronomic three-course meal under the chef’s direction, in using the freshest seasonal produces from the market. Each class lasts three hours. Tasting lunch or dinner follows the class… an enjoyable moment (on the outside terrace if the weather permits) to enjoy the fruits of your labor while continuing the conversation with the chef.
